Kid-Friendly Easter Treat: Rice Krispie Nests!

Back away from the eggs! Have the kids help you make a fun and easy Easter treat.

Rice Krispie Nests were an Easter tradition in my house. Making them has always been a good opportunity to get children involved in the creation of Easter memories. I hope you will enjoy this recipe and step by step instructions. Although I know that this recipe is by no means healthy I have included an alternative to using green food coloring for those that want to try it out.

  • 2 Tbsp Butter or Margarine
  • 10 Ounce Bag of Marshmallows
  • 7 Ounce Bag of Sweetened Flake Coconut
  • 1 Bag of M&M’s (Peanut or other egg shaped variety)
  • 1-2 Packages of Peeps
  • 1 Tube of Green Food Coloring OR Package of Spinach

Directions

    Gather the ingredients. Be sure to use the whole bag of marshmallows this will allow them to cool off but stay pliable.

  2. Melt butter in a saucepan over low heat.
  3. Add 1 handful of marshmallows. Stir the butter and marshmallows constantly until they form a smooth texture and repeat step 3 until all of the marshmallows are melted. (Stirring the mixture is a perfect task for the kids as long as they are old enough for you to feel comfortable with them around the stove)
  4. Combine marshmallow mixture and crispy rice cereal until well blended. Set aside to cool.
  5. WP_20150320_060Separate the bag of coconut into two Ziploc bags (I say 2 so that each twin has a bag, but feel free to adjust the number according to family size. I also write the child’s name on the bag.)
  6. Add a few drops of green food coloring to each bag. (***see below for a healthy alternative to green food coloring, using spinach)
  7. Grease a regular size muffin tin. Place a ball of cooled rice crispy in each opening.
  8. Have the kids help you smash the balls of rice crispy into the bottom of the muffin pan.
  9. Have kids shake up the bags of coconut to distribute the dye.
  10. Place the coconut on top of the rice crispy treats.
  11. Add M&M’s to the nests to look like “eggs”.
  12. Put Peeps on the nests to “keep the eggs warm”. (1 regular package of peeps includes 10 peeps, leaving 2 unguarded nests. I chose to just get 10 but if you want each nest to have a Peep, get 2 packages.)
  13. Now the best part. Eat them!

WP_20150320_006***Healthy alternative to green food coloring: Make natural food coloring using spinach and water (I promise it will not affect the taste.) Wash spinach in cold water and add spinach and 1 cup of water to a food processor. Blend until the mixture forms a consistent frothy liquid. Add 6 Tablespoons of spinach juice to each bag. (If you have divided the coconut into more than 2 bags add less spinach juice.)
